I certainly agree about Saul's conversion as a perfect example. I also have to mention J.R. Ewing. Just when I thought that he couldn't be more despicable he would suddenly show me a good reason he was acting that way. I mean, I know those elements exist in a story, just didn't think of them as an antagonist.
